Spanish Omelette


So yummy!

Ingredients

2 Chorizo links
4 eggs
1 medium size potato
1/4 red onion
1/4 c grated cheese










Directions:

1. In a large skillet pour about a cup of olive oil and heat on medium high heat.
2. Wash potato cut in quarters and slice very thinly (you could use a mandolin slicer for this), slice onion in thin slices as well. Cut chorizo in about 1/4 inch thick pieces.
3. Add onions, potatoes, and chorizo into the hot oil and cook until potatoes and onions start to caramelize (about 15 minutes)
4. Drain potatoes, onions, and chorizo and place in a bowl. Crack in the 4 eggs and stir until combined. Let sit in the bowl for about 5 to 10 minutes.
5. Prepare a baking dish with a light coating of cooking spray, pour egg mixture into the dish. Top with grated cheese and bake in a preheated oven at 450ยบ for 10 minutes or until egg is set.

Serves 4-6 people.
