Beef and Broccoli


1/2 lb fajita beef
1 bag frozen broccoli
1 c rice
1/4 c brown sugar
1/4 c rice wine vinegar
1/3 c soy sauce
2 T sesame seed oil
1 t ginger
1 t garlic
1/2 t crushed red pepper flakes
1 t black pepper





1. Whisk together brown sugar, rice wine vinegar, soy sauce, sesame seed oil, ginger, and garlic, set aside.

2. Slice beef into thin strips for quick cooking. Thaw the frozen broccoli in the microwave in a bowl for 3 minutes. Coat the beef strips in about a tablespoon of corn starch. Heat a large skillet on medium high heat, add 2 T of grapeseed oil.

3. Once the oil is hot, place the beef in the skillet, stirring constantly until cooked through, approximately 5 to 8 minutes. Then add the thawed broccoli, stirring constantly, cook for 3 to 5 minutes longer, then add in the sauce. Bring to a strong boil, and cook until sauce thickens, about 5 minutes. Reduce heat and simmer until sauce reduces and broccoli is tender; about 10 minutes.

4. serve over white rice. Serves 4.
