Chicken, Broccoli, Asparagus Alfredo


This is my recipe for alfredo sauce. I'm sure it's not the traditional, but it's just as delicious and I'm sure everyone has their variations.  For this recipe you will need the following.














Ingredients

1 lbs of boneless skinless chicken tenders
2 c broccoli florets
1/2 lb asparagus spears
1 small red onion
2 tsp smoked paprika
2 tsp garlic powder
1 tsp basil
1 tsp parsley
1 tsp oregano

Alfredo sauce

2 c Asiago cheese
2 c Parmesan cheese
2 cloves of garlic
2 c heavy cream
2 TBSP of butter
2 TBSP of flour

1 package of your favorite pasta (for this recipe I used Linguini)
salt and pepper to taste

Directions

1. Prep work: In a large pot add your water and salt liberally and bring to a boil. Heat a large skillet on medium heat with a tablespoon of olive oil. Trim asparagus and chop them into 1 inch pieces, rinse the broccoli and set them aside in a bowl. Grate your cheeses and set them aside, finely dice a small onion and two cloves of garlic.  Cube your chicken tenders.

2. Once the pan is hot, add your chicken into the pan and brown off adding the garlic powder, paprika, basil, parsley, and oregano. Once chicken is brown, remove from the pan. Add about a tsp more olive oils and saute your onions and garlic. Your pot of water should be boiling now. So add your pasta, and then the broccoli and asparagus. Pasta takes about 5 to 7 minutes to cook depending on the type you use. For the linguini I cooked my pasta for 7 minutes along with the broccoli and asparagus. When the pasta was done, I skimmed out most of the veggies and drained the pasta, leaving about half a cup of the pasta water to loosen the sauce.

3. Once the onions and garlic are sauteed, about 15 minutes, scoop them out and add in your two tablespoons of butter, let that melt down and then add the four, cook them until it forms a roux. Then whisk in the heavy cream, allow to thicken slightly, then quickly stir in the cheeses and once completely combined toss in the pasta, then add in your veggies and the chicken and return to the heat for another 10 minutes or until everything is well combined and the chicken is thoroughly cooked.
