Pumpkin Bread Muffins (Vegan)


Ingredients:

2 c flour
1/2 cup brown sugar
1 T baking powder
1 t cinnamon
1/2 t baking osda
1/2 t salt
1/2 t nutmeg
1 (15oz) can pumpkin puree (pie filling works)
1/2 c water
1 t vanilla extract




Optional topping

2 T oats
2 T brown sugar
1 T oil














Directions:

Whisk flour, brown sugar, baking powder, cinnamon, baking soda, salt, and nutmeg in large bowl. Stir in pumpkin, water, and vanilla into dry ingredients, mixing until moistened.

Spoon mixture into muffin tins to just below the top and bake at 375ยบ F for 25-30 minutes.





Topping Directions:

Spoon on tops of muffin mixture and press in
