Brunch Casserole


Ingredients:

1lb Jimmy Dean country mild breakfast sausage
1 large green pepper
1/2 large red onion
6 large white eggs
1 medium to large russet potato
1 T chili powder
1 T onion powder
2-3 cloves of garlic
1 t oregano
1/4 c milk
salt and pepper to taste




 Prep work - 10 mins

  1. Peel, rinse and dice potato. 
  2. Finely chop green pepper and onion and garlic.
  3. Heat a large skillet and then add about a tablespoon of olive oil to the hot pan. 
  4. Whisk eggs with quarter cup milk, salt and pepper to taste. 
  5. Preheat oven to 450º F and grease casserole dish.

Cook time - approximately 45 minutes

  1. Saute onions, garlic and green pepper. (about 15 minutes or until soft)
  2. add in diced potato and continue to cook for another 10 minutes.
  3. crumble in sausage, add seasons and cook until sausage is well done.
  4. pour into casserole dish, and then pour egg mixture over sausage and potato mixture
  5. (optional) place four slices of American cheese or a half cup shredded cheddar cheese over the top


Bake in oven at 450º for 20-30 minutes; until eggs are set.
