Ingredients:
1lb Jimmy Dean country mild breakfast sausage
1 large green pepper
1/2 large red onion
6 large white eggs
1 medium to large russet potato
1 T chili powder
1 T onion powder
2-3 cloves of garlic
1 t oregano
1/4 c milk
salt and pepper to taste
Prep work - 10 mins
- Peel, rinse and dice potato.
- Finely chop green pepper and onion and garlic.
- Heat a large skillet and then add about a tablespoon of olive oil to the hot pan.
- Whisk eggs with quarter cup milk, salt and pepper to taste.
- Preheat oven to 450º F and grease casserole dish.
Cook time - approximately 45 minutes
- Saute onions, garlic and green pepper. (about 15 minutes or until soft)
- add in diced potato and continue to cook for another 10 minutes.
- crumble in sausage, add seasons and cook until sausage is well done.
- pour into casserole dish, and then pour egg mixture over sausage and potato mixture
- (optional) place four slices of American cheese or a half cup shredded cheddar cheese over the top
Bake in oven at 450º for 20-30 minutes; until eggs are set.
