The grinder sandwich is the newest craze on tiktok. I had to do my own take on it. Here's what you'll need.
Ingredients
- two chicken breast, split in half and pounded thin
- Grinder salad
- salami
- provolone
- mozzarella
- cheddar cheese
Marinate for the Chicken:
2c half and half or buttermilk
1 cup hot sauce of your choice
2 tsp chipotle pepper powder
2 tsp garlic powder
2 tsp onion powder
Salt and pepper
Flour mixture for dredging:
- 3 c flour
- 1 TBSP curry powder
- 1 TBSP cayenne
- 1 TBSP smoked paprika
- 1 TBSP chipotle pepper
- 1 TBSP cumin
- 1TBSP garlic powder
- 1 TBSP onion powder
- 2 tsp oregano
- 2 tsp crushed red pepper flakes
- Salt and pepper
- 1/4 c baking powder
Grinder Salad
- Romaine lettuce (or whatever lettuce you have)
- Pepperoncini (about 8, and a quarter cup of the pickling liquid)
- 1/2 C kewpie mayo (or ranch dressing/regular mayo)
- Half a medium red onion thinly sliced
- Tsp oregano
- Tsp crushed red pepper flakes
- Tsp garlic powder
- Salt and pepper to taste
Mix your dressing, with all the seasonings then add in your onions and lettuce of choice and mix until all veggies are coated in the dressing.
The three types of salami I used are
- Sopressata Dolce
- Brickyard Salami,
- Felin Artisan Salami.
The Three types of cheeses I used are:
- Mozzarella
- Provolone
- Sharp Cheddar
- Once you have everything prepare, get you a nice sub/hoagie roll, Italian bread, Chibata, or Foccacia bread.
- Layer your chicken breast and salamis on one side, and your cheeses on the other side
- Set your oven to 400F, bake for 5 to 10 minutes until bread is toasted, and the cheese is melted.Add your grinder salad and serve.
