Spiced Pumpkin-Oatmeal Cookies


2 c flour
1 1/3 c oats
1 1/4 t baking powder
1 1/2 t cinnamon
1 t ground ginger
1 t salt
1/2 t ground nutmeg
2 sticks unsalted butter
1 c brown sugar
1 c sugar
1 egg
1 t vanilla
1 can pumpkin (15 oz)



Preheat oven to 350ยบ line two cookie sheets with parchment paper.

1. Sift dry ingredients and whisk in oats.
2. Cream butter and sugars. Add in egg and vanilla and mix well.
3. Alternate between dry ingredients and pumpkin until all is incorporated.
4. Scoop about a 1/3 cup of the dough onto prepared cookie sheets, about 2 inches apart.
5. Bake at 350 for 12 minutes, turn sheets front to back and bake an additional 12 minutes.

Maple Glaze (optional)

1 1/2 c sifted powdered sugar
3T 1t of milk
2T of maple syrup

1. whisk all ingredients until evenly combined. Add in 1/2 t of milk at a time if glaze is too thick to drizzle.
2. use a fork to drizzle over cooled cookies. Allow them to set for 20 minutes at least.
