Strawberry Cake with Cream Cheese Frosting




Ingredients:

1 C unsalted butter
2 C sugar
4 eggs
2 egg yokes
1 t salt
3 t baking powder
3 C flour
2 C buttermilk
2 1/2 t vanilla
1 package of strawberry jello mix
1 C diced strawberries




Cream Cheese Frosting:

1 C unsalted butter
1 lb cream cheese
2 C confectioners sugar
1 t vanilla
1 t lemon juice


1. Preheat oven to 350º F. Flour and grease cake pans
2. Cream butter and sugar add in eggs one at a time, then add in egg yokes
3. Sift jello mix, flour, salt, and baking powder, alternate in halves between dry ingredients and milk. Then add in vanilla and strawberries and mix well.
4. Divide into two cake tins and bake at 375º F for 30 to 40 minutes (because of the added liquid from the strawberries and the extra dry ingredients of the jello mix, it takes a bit longer to bake).
5. Let cakes cool completely on wire racks before icing. 






Cream Cheese Frosting:

1. Cream butter and cream cheese until blended and smooth.
2. Add in a half a cup of sugar at a time until all 2 cups are incorporated. Stir in vanilla and lemon juice.
