Sweet Potato and Ham Hash with a Fried Egg


Ingredients

1 medium size sweet potato
1/2 medium size green pepper
1/4 c red onion
1/3 c diced breakfast ham
1 t cumin
1 t chili pepper
1 t garlic powder
1 t onion powder
1/2 t salt
1 t black pepper







 1. Peel and dice sweet potato, place the potato in a microwave safe bowl, add some water and heat for 3 to 4 minutes (this softens the potatoes so that they cook through at the same time as everything else).

2. Dice ham into cubes, dice onions and green pepper.

3. In a hot skillet over medium heat, add a tablespoon of oil, add your ham in and cook through until heated, remove from the skillet and set aside, add your onions and green pepper to the skillet, saute until softened. Then add your drained parboiled sweet potatoes and the ham back into the skillet.

4. Stir in seasonings, and cook until everything is cooked through evenly, and the potatoes are soft but not mushy.

$. Remove the hash, wipe out your skillet and add another tablespoon of oil to the pan, fry an egg, how you like it and set it on top of the hash.
