Christmas Cookies: Cranberry Shortbread



 Ingredients:


1 1/4 C butter
1 C powdered sugar
2 1/4 C flour
1 5-ounce package of Ocean Spray Cranraisin Dried Cranberries


 

Directions

Preheat oven to 325 F
Cream butter and powdered sugar until fluffy. Sift flour, and gradually add flour and mix until well blended. Stir in cranberries. Form dough into 1-inch balls and place 1-dozen on an un-greased cookie sheet.

For round cookies, bake at 325 for 15 to 17 minutes


For flat round cookies, form 1-inch balls as directed above, take a glass dipped in granulated sugar and press to flatten cookies into 2-inch disks and bake for 12 to 14 minutes. 


Cookies will spread slightly and puff up. They will remain fairly pale, but they are done. Let them cool on rack for about 15 minutes

 Transfer them to a tin and let set an additional 20 minutes or so to cool completely before putting on the lid.
