Pulled Pork with Colesaw

These were easy to make. The longest thing was cooking the pork tenderloin.

Pulled Pork

Ingredients


2 lb pork loin
2 ltr bottle of coke
1 bottle of your favorite Barbeque sauce (I used Kraft original smoked barbeque sauce)







In a slow cooker, or a deep baking pot put the pork tenderloins and the coke until the pork is nearly covered. Bake covered for 3 hours minimum. Pull pork out, let rest and then take two forks and pull pork apart shredding it. Add barbeque sauce and mix well.


Coleslaw

Ingredients

1 head of cabbage
2 large carrots
1 large red onion
2 c mayonaise
1/4 c sour cream
2 T of apple cider vinegar
2 to 4 T of sugar (to taste)
1 T spicy brown mustard
Salt and pepper to taste

Shred cabbage and carrots. Thinly slice onions, mix in mayo, sour cream, vinegar, sugar and mustard, then salt and pepper to taste. Tastes better the longer it sits.

I used whole wheat kaiser rolls for the bread, but any kind of bun you like. Take tongues and put a good portion of the pulled pork on the bun, then top with coleslaw. Sweet and tangy with a kick!
