This is a recipe adapted from one by +Naomi King, since I'm allergic to walnuts, I couldn't do the banana nut muffins she made. But I wanted to try a vegan recipe, so here it goes. Thanks for the inspiration Naomi!
Ingredients
2 bananas
1/2 c water
2/3 c sugar
2/3 c oats
1 1/2 c flour
1 t vanilla
1 t baking powder
1/2 t salt
1/8 t cinnamon
1/8 t cloves
1/8 t ginger
1/8 t nutmeg
Directions
Preheat oven to 350ยบ F
1. mash bananas with a fork
2. mix in water, sugar and vanilla
3. sift in flour, baking powder, salt and spices.
4. pour into greased cupcake tin; filling about 3/4 of the way.
5. Bake for 15 to 20 minutes
