Sausage, Peppers and Onions Pasta





Ingredients:

1 large green bell pepper
1 medium red onion
1 can diced tomatoes
1lb sausage (I used Jimmy Dean Country Mild, but Italian would work better)
1lb bow tie pasta
2 cloves of garlic finely minced
1 C unsalted butter




1. Chop onions and green peppers, mince garlic, in a heated skillet put a table spoon of olive oil, saute vegetables and garlic until cooked through, remove from pan and set aside.
2. Brown sausage until cooked through
3. Drain any excess grease and add the vegetables back into the pan, pour in a can of diced tomatoes with the juice
4. Cube butter and add it to the pan, you can add a few table spoons of cornstarch to thicken the sauce
5. Cook and drain pasta per standard directions.
6. Toss pasta with the sauce.
