Pumpkin Bread


Ingredients:

3 C sugar
1 C vegetable Oil
3 large eggs
1 16oz can of pumpkin puree
3 C flour
1 t each of Cinnamon, nutmeg, ground cloves, allspice, baking soda
1/2 t of salt and baking powder


Instructions:

*Makes two loaves

1. Preheat oven to 350º F; butter and flour 2 9x6 loaf pans.
2. Beat sugar and oil in large bowl to blend; mix in eggs and pumpkin.
3. Sift flour, cloves, cinamon, nutmeg, allspice, baking powder/soda, and salt into another large bowl
4. Stir into pumpkin mixture

Divide batter equally into pans. Bake at 350º F for 1 hour and 10 minutes or until toothpick inserted in center comes out clean. Let cool in pans for 10 minutes then turn out on wire racks and allow to cool completely.
