Double Peanut Butter Cookies dipped in Chocolate
Ingredients:
1/2 c sugar
1/2 c packed brown sugar
1/2 c butter (1 stick)
1 c peanut butter
1 egg
11/4 c flour
3/4 t baking soda
1/2 t baking powder
1/4 t salt
5 oz (half a bag) Reese's peanut butter chips
Cream butter, add sugar and cream butter and sugar mixture.
Mix in peanut butter and egg.
Sift dry ingredients.
Stir dry ingredients a little at a time into peanut butter mixture, incorporate fully.
Wrap in saran wrap and refrigerate for three hours
Spoon dough and roll into approximately 1 inch balls, and place on a greased cookies sheet. Press a fork into the tops of the cookie balls making a criss cross pattern. Bake in a 375 oven for 10 minutes for chewy cookies, for crispier cookies 11-12 minutes
Melt about half a bag (5 oz) of milk chocolate chips in the microwave for 1 minute. Stir until smooth. After cookies have cooled completely. Dip bottom of cookies into chocolate sauce. Scrap off excess with a plastic knife. Cool upside down on wire rack until chocolate is sets and is hardened to the touch.
